Tasty Treat Tuesday: Glazed Mini Lemon Poppy Seed Muffins

There have been a few times in my adult life where others have made lemon poppyseed bread/muffins for me and every time they have been delicious.  I always say I am going to ask for the recipe and attempt to make some myself, but that has yet to actually happen.  I think in my mind I had convinced myself that lemon poppyseed bread was hard to make.  I came across this recipe on Pinterest and it looks so easy and so very yummy.  I can’t wait to test it out.  Thanks Delish!

Here’s what you need to make these:

Muffins:

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/4 tsp baking soda
  • 1/2 cup Greek yogurt
  • 1/2 cup milk
  • 2 Tbsp fresh lemon juice
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 Tbsp grated lemon zest
  • 2 large eggs
  • 2 tsp poppy seeds

Glaze:

  • 6 Tbsp confectioners sugar
  • 4 tsp lemon juice
