Rice Meatballs Recipe

rice-meatballsWhen my husband and I were dating, would would sometimes eat at my now in-laws house for dinner.  I remember one night my mother-in-law made rice meatballs for dinner and they were yummy!  After we were married, I have collected a number of recipes from my mother-in-law and this is one of our family’s favorites!  It’s one of my go to recipes when I need something that’s quick to fix.  I serve it over noodles or rice with a side of veggies.

Rice Meatballs Recipe

Easy Rice Meatballs recipe
Ingredients
  • 1 cup uncooked minute rice
  • 1 lb ground beef (I use 93/7)
  • 1 egg, slightly beaten
  • 2 t. grated onion
  • 2 t. salt (I cut this in half)
  • ⅛ t marjoram
  • dash pepper
  • 2½ cups tomato juice (or two 8 oz cans tomato sauce mixed with ½ cup water)
  • ½ t sugar

Instructions
  1. Combine rice and all other ingredients except tomato juice and sugar. Form balls and arrange in skillet.
  2. Pour tomato juice & sugar mixture over meatballs. Bring to boil.
  3. Reduce heat & simmer uncovered 20 minutes.

Tasty Treat Tuesday: Leprechaun Bark

leprechaun bark 553This week’s tasty treat recipe is in honor of St.Patrick’s Day.  I feel like I use the same old boring dessert recipes for St. Patrick’s day every year.  I am so tired of green jello and green colored cake with green frosting!  This Leprechaun Bark will be such a nice (and yummy) change of pace.  Thanks Couponing and Cooking!

Here’s what you need to make this:

  • 1 pound good melting chocolate ( bars, chips, melts)
  • 1 pound good melting white chocolate (or candy melts)
  • Green food coloring
  • 1 cup of crushed Mint M&M’s
  • 1 cup of Andes Mint Baking Chips
  • Green colored sugar

Cooking With Kids Thursday: Apple Peanut Butter Snack Bars

applepbsnackbar2-878x1024We eat a lot of granola bars in our house.  A couple of my kids are not big breakfast eaters and granola bars are about all that I can get in them in the mornings.  I have always had a little guilt about this, knowing that it isn’t the healthiest option out there.  This recipe for apple peanut butter snack bars has changed my world!  Now I can feed the kids what they want and I can still feel like a good mom, knowing the kids are eating something healthy.  Thanks Happy Healthy Mama!

Here’s what you need to make these:

  • 2 cups rolled oats
  • 1 cup shredded apple (one medium apple)
  • 1/4 cup peanut butter
  • 1/2 cup honey
  • 2 eggs
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon pure vanilla extract

Tasty Treat Tuesday: Quick Version Amish Friendship Bread

CinnamonBread2I am so excited about this recipe!  I was in college the first time I tasted Amish Friendship Bread and I was hooked from the start.  For those of you familiar with this kind of bread, you know what a lengthy process it is to make.  If I remember correctly, it is a two week process involving daily squishing, mixing, and separating.  Let’s also not forget all the extra starter bags it yeilds that you then have to find to share with others.  The end result is worth all of that, really it is, but I just don’t have that kind of time right now nor the mental capacity involved in remembering to follow the daily steps for two weeks.  My kids and their schedules occupy pretty much all of my brain power these days.  It is for all these reasons that I am so excited about this recipe for cinnamon bread that tastes just like Amish Freindship Bread!  The best part… it takes less than 2 hours to make it.  Thanks for sharing Redfly Creations!

Here’s what you need to make this:

Batter:
  • 1 cup butter, softened
  • 2 cups sugar
  • 2 eggs
  • 2 cups buttermilk or 2 cups milk plus 2 tablespoons vinegar or lemon juice
  • 4 cups flour
  • 2 teaspoons baking soda
Cinnamon/sugar mixture:
  • 2/3 cups sugar
  • 2 teaspoons cinnamon
