Pistachio Fruit Salad Recipe

pistachio-fruit-saladI was raised on this Pistachio Fruit Salad recipe!  We would have it as a side at family gatherings, Easter, and it’s great for summer potlucks or St. Patrick’s Day, too!  My kids think it’s a dessert!

Pistachio Fruit Salad Recipe

Pistachio fruit salad recipe – perfect for summer potlucks and other family gatherings!
Ingredients
  • 1 tub Cool Whip (the bigger tub) – I use fat free and it’s fine
  • 1 box Pistachio pudding mix (I use sugar free)
  • 1 can fruit cocktail mix (drained)
  • Optional: banana (sliced) and marshmallows

Instructions
  1. Mix the Cool Whip and Pistachio pudding mix together.
  2. Add in the fruit cocktail and mix well.
  3. Add marshmallows and/or banana slices if you choose (it doesn’t “keep” as well with the banana slices).
  4. Refrigerate for at least one hour and then serve!

 

 

Mashed Potato Casserole

mashed-potato-casseroleWho doesn’t love mashed potatoes?  Every now and then, though, it’s nice to have some variation on your traditional mashed potatoes.  I discovered this recipe two years ago when Hoosier Homemade posted it!  It’s perfect for Easter, Thanksgiving, or when you need a comfort food fix!

Here’s my variation of the recipe:

Mashed Potato Casserole

Ingredients
  • 8 oz cream cheese, softened
  • 1 cup Ranch dip
  • 2 eggs, beaten
  • 1 cup milk
  • 2 cups water
  • ½ c. margarine
  • 3 cups instant potato flakes
  • 8 oz shredded cheese

Instructions
  1. Spray 13X9 baking dish with nonstick spray.
  2. In a saucepan, combine the water and margarine and bring to a boil. Remove from heat, add the potato flakes, and mix well.
  3. Beat the eggs, cream cheese, dip, and milk until smooth. Stir in half of the shredded cheese.
  4. Pour the potatoes into the egg and cream cheese mixture. Beat until smooth and then pour into the baking dish.
  5. Bake at 350 degrees for 30-40 minutes uncovered. You can also refrigerate and then bake it later.
  6. I add the remaining cheese on top when I’m ready to serve.

 

 

Super Easy Ham Glaze!

I’ve been spoiled because my parents usually cook Easter dinner, but they were out of town this year, and I was left to my own devices! This is a super easy ham glaze that I used and it was so yummy!

Super Easy ham glaze recipe
Ingredients
  • 1 ham (I used a Hormel Cure 81 boneless ham)
  • 1 cup packed brown sugar (light or dark should work)
  • 2 tablespoons Dr. Pepper (or any other cola drink)
  • 1 tablespoon yellow mustard

Instructions
  1. Line a large pan with aluminum foil.
  2. Score the top of the hand by making diagonal cuts across the top. Place ham in the center of the foil.
  3. Mix together the Dr. Pepper, brown sugar, and mustard, and brush half the glaze over the top.
  4. Wrap the ham up in the foil and bake for 20 minutes per pound at 350 degrees.
  5. Open the foil and brush the remaining glaze over the top. Bake 20-30 minutes longer.
  6. Remove and allow to cool for 10-15 minutes. Slice and serve!

country-style-macaroni-and-cheeseI first discovered this recipe on a Babycenter.com Cooking for Your Family message board several years ago.  It has become one of my kids favorite recipes.  They choose it for birthdays, back to school dinners, and any time that I ask for their input on our weekly menu.  It’s also a great way to use up extra ham!

Here’s how you can make Country Style Macaroni and Cheese:

Quick and Easy Macaroni & Cheese Recipe!
Ingredients
  • 1 lb country ham slices or regular smoked ham in one piece (I just use whatever leftover ham we have on hand)
  • 1 lb elbow macaroni (I use whole wheat)
  • 2 cups shredded extra sharp cheddar cheese (8 oz) (I use reduced fat)
  • 1 cup sour cream (I use reduced fat)
  • 1 can cream of chicken soup (I use 98% fat free)
  • ¼ cup (1/2 stick) margarine, melted (I don’t use this when I make it)
  • 1 cup dry plain bread crumbs
  • 1 tsp diced onions or onion powder
  • 1 tsp garlic salt
  • salt and pepper to taste

Instructions
  1. Pre-Heat oven to 400º.
  2. Bring 4 quarts water to boiling in large pot. Once water begins to boil,
  3. add macaroni to pot. Return water to boiling and cook 8 minutes, stirring occasionally.
  4. While the macaroni noodles are cooking, coarsely chop the ham.
  5. Drain macaroni.
  6. In a large mixing bowl, combine macaroni, ham, ½ of the cheese, sour cream, soup, onion powder, garlic salt, and salt and pepper. Mix well.
  7. Place the mixture in a 13X9 baking dish. Sprinkle the remaining cheese over the top and then sprinkle with bread crumbs.
  8. Bake at 400º for 30 minutes or until heated through and top is golden brown.
  9. Let stand 5 minutes before serving.
