Red Velvet pancakes breakfast recipe!


On Sunday mornings, I typically make pancakes for my kids.  We love to experiment and add different things to our pancakes or try different recipes, but in a discussion on Facebook about what we were having for breakfast, Casie mentioned Red Velvet pancakes.  I’ve heard of and LOVE Red Velvet cake, but the concept of Red Velvet pancakes was a new one for me and a lot of others as well!

Casie was kind enough to share her recipe with us.  This won’t be our breakfast this morning, but we’ll DEFINITELY be trying it out on Sunday!

Ingredients (pancakes):
1 1/2 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 tablespoon cocoa powder
1 teaspoon salt
2 eggs
12 ounces buttermilk
4 tablespoons butter, melted and cooled slightly
1 teaspoon vanilla
1 teaspoon vinegar
2 teaspoon red food color

Ingredients (glaze):
4 ounces softened cream cheese
1 cup powdered sugar
1 teaspoon vanilla
Add a few drops of milk to get consistency to drizzle

For pancakes, mix all dry ingredients together first, then add “wet” ingredients.  Garnish the “finished product” with pecans if you choose!

Cooking With Kids Thursday: Watermelon Pops

This idea comes from one of my favorite sites, Kraft Recipes.  These watermelon pops would be so fun to make with the kiddos.  There is lots of stirring and pouring to do so even the little ones have ways to help.

Here’s what you need to make these:

  • 1 cup sugar, divided
  • 1 pkg. (3 oz.) JELL-O Lime Flavor Gelatin
  • 2 cups boiling water, divided
  • Ice cubes
  • 1 cup cold water, divided
  • 1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
  • 3 Tbsp. miniature semi-sweet chocolate chips
  • 1/2 pkg. (4 oz.) PHILADELPHIA Cream Cheese, softened
  • 1-1/2 cups thawed COOL WHIP Whipped Topping
  • Dixie Cups
  • Popsicle Sticks

Tasty Treat Tuesday: Glazed Doughnut Muffins

Whoever came up with this recipe is a genius!  Who doesn’t like doughnuts and muffins and now you can combine the two into one delcious treat.  Yum!  Thanks Sweet Peas Kitchen!

Here’s what you need to make these:

For the Muffins:

  • 1/4 cup butter
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 large eggs
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon ground nutmeg
  • 1 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 2/3 cups all-purpose flour
  • 1 cup milk

For the Glaze:

  • 3 tablespoons butter; melted
  • 1 cup confectioners’ sugar; sifted
  • 3/4 teaspoon vanilla
  • 2 tablespoons hot water

Cooking With Kids Thursday: Sugar Cookie Tacos

These look delicious and make the perfect summer treat!  What kid wouldn’t enjoy assembling these?  Even making the “taco shells” is fun.  Just try not to eat too much cookie dough!

Here’s what you need to make them:

  • 1 Package 18oz refrigerated sugar cookie dough
  • 2 tablespoons cinnamon
  • 1 cup whipping cream
  • 1/4 cup sugar
  • 2 cups of your favorite fruit cut-up

Tasty Treat Tuesday: Strawberries and Cream Pie!

This one goes out to my husband, the man who loves any and all kinds of pie!  If given the chance, he would probably eat the whole thing in one sitting.  Too bad he has a mean wife that won’t let him do that.  There are two things that I love about this pie.  First is how easy it is to make.  Second is how versatile it is.  If you aren’t in the mood for strawberries you could use peaches or bananas or any other fruit you want. Thanks Just Putzing!

Here’s what you need to make this:

(Crust)

  • – 1-1/2 cups graham cracker crumbs (About 9 full/long crackers — just throw them in a gallon bag, zip, and crush with a rolling pin.)
  •  – 5 tbsp butter, melted

(Filling) 

  • 2 8oz blocks of cream cheese, room temperature
  • – 2 cups heavy cream + 1 tbsp
  •  – 2/3 cups sugar
  • – 2 tsp vanilla extract
  • – 1 carton strawberries, sliced into thirds or halves
  • – 1/2 cup chocolate chips (optional)

**If you choose to use a store bought crust, then either half the filling recipe or be prepared to use two crusts.  Store bought crusts tend to be smaller than traditional pie dishes.
