Tasty Treat Tuesday: Strawberry Lemon Bread

My mouth is watering just looking at this picture.  This strawberry lemon bread looks so moist and light and refreshing.  I love that it uses fresh strawberries instead of preserves or syrups.  That totally makes it healthy, right? I am jsut trying to justify the several slices I will be eating.  Thanks for the recipe Recipe Biter!

Here’s what you need to make it:

  • 1/2 cup room temperature butter
  • 1 cup sugar
  • 2 eggs
  • 1 lemon zest
  • 2 tbsp lemon juice (fresher is better!!)
  • 1 1/2 cups flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sour cream
  • 1/2 lb strawberries
  • 1 tbsp flour
  • 1 cup powdered sugar (for glaze)

Cooking With Kids Thursday: Banana Peanut Butter Sushi

When I saw this meal idea, two things came to mind.  First is that this would be such a cute lunch to send with my preschooler and kindergardner to school.  Second is that this is the perfect lunch that my kids could make all by themselves.  They are always asking if they can help when I am prepping meals, and I am always freaking out as I watch them heading for a knife to “help” me.  Letting them make this gives them the opportunity to practice those cutting skills, while using a harmless butter knife.  Can you guess what we are having for lunch tomorrow?  Thanks I Love Easy Kids Recipes!

Here’s what you need to make this:

  • 1 (8″) soft whole wheat tortilla
  • 1 banana
  • 1T raisins
  • cinnamon
  • honey
  • 2T peanut butter
