Tasty Treat Tuesday: Apple Muffins!

Last week my daughter was learning about apples in preschool and had to take in a treat made from apples to share with everyone.  I dont’ really bake/cook with apples so I was kind of at a loss, until I came a cross this recipe for apple muffins.  It is a pretty basic recipe and didn’t take me long to make at all.  They were also super yummy!  My whole family loved them and they were a huge hit at the preschool.  Thanks The Girl Who Ate Everything!

Here’s what you need to make these:

  • 2 cups sugar (or use 1 1/2 cups for a less sweet muffin)
  • 2 eggs 1 cup oil
  • 1 Tablespoon vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 cups peeled, cored, diced apples (around 3 apples)
  • Brown sugar for topping (around 1/2 cup)

Cooking With Kids Thursday: Pumpkin Preztels

These pumpkin pretzels are so festive and would make really cute gifts for neighbors and friends.  This is also a project that could be assembled almost completely by the kiddos.  All the adult needs to do is melt down the chocolate… and supervise the dipping.  Prepare for messes!  Thanks Butter With A Side Of Bread!

Here’s what you need to make these:

  • 1 bag mini pretzels {you won’t use the whole bag, only about 1/4}
  • 1 bag M&M’s candy, needing only the green ones {fun separating activity for kids!}
  • orange food coloring, I used about 1/8th tsp of Wilton’s gel colors
  • 1 bag White Chocolate chips, melted slowly
  • 1 TBSP shortening, to thin out chocolate

Tasty Treat Tuesday: Chocolate and Peanut Butter Bugles!

I am in need of a quick chocolate fix today.  It has already been one of those weeks and it is only Tuesday!  I am sure that these Chocolate and Peanut Butter Bugles will do the trick.  Thanks Cookies and Cups!

Here’s what you need to make these:

  • 1 (7.5 oz) bag of Bugles
  • 2 (9.5 oz) bags of Dove Milk Chocolates..use whatever chocolate you most prefer
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 2+ Tbsp of milk

Cooking With Kids Thursday: Homemade Poptarts!

I love Poptarts.  I grew up eating them for breakfast almost every morning, but I just can’t bring myself to feed them to my children.  They are just so high in sugar, among other things, and I like to send my kids out the door in the morning with something a bit more substantial.  I came across these homemade poptarts on pinterest and I can’t wait to try them out.  I’m thinking we could make a bunch over the weekend and then they would be good to go all week long.  My kids will love getting to pick/make their own fillings.  I also might not use the glaze on top.  Thanks Undressed Skeleton!

Here’s what you need to make these:

Pastry Dough:

  • 1 Cup Whole Wheat Flour
  • 1 Cup White Flour
  • 2 Tbsp Baking Stevia
  • 1/2 Tsp Salt
  • 1/4 Cup Plain Chobani
  • 1/4 Unsalted Butter Diced at Refrigerator Temp.
  • 3 Tbsp Skim Milk

Glaze:

  • 2 Cups Powdered sugar
  • 2 Tbsp Meringue Powder
  • 4 Tbsp Water
  • Sprinkles of course!

Toppings:

Tasty Treat Tuesday: Lemon Brownies

I feel like I have been sharing a lot of chocolate based recipes lately so I thought I would go in a different direction this week.  I came across this recipe for Lemon Brownies on Pinterest and I have been dying to try it.  The recipe is fairly easy and I already have most of the ingredients.  I just need a lemon.  Thanks for sharing Rita’s Recipes!

Here’s what you need to make these:

  • 3/4 C flour
  • 3/4 C sugar
  • 1/4 t salt
  • 1 stick butter, soft
  • 2 eggs
  • juice from 1/2 lemon (about 1T)
  • zest from 1/2 lemon (about 1t)
