Easy Sweet & Sour Pork Recipe

I got this recipe from my mother in law when I was first married.  It is quick and easy to make and our family enjoys it!  You can substitute chicken for the pork if you’d prefer.  We always use ham because I’ve got plenty of chicken recipes and this gives us something a little different!

Here’s the recipe:

This is a quick and easy sweet and sour pork recipe!
Ingredients
  • 1 t. soy sauce
  • ¼ cup sugar
  • 1½ T cornstarch
  • dash of salt
  • ½ c. pineapple juice or water
  • 3 T cider vinegar
  • 2 T ketchup
  • Pineapple, onions, green peppers
  • Chopped ham

Instructions
  1. Mix soy sauce, sugar, cornstarch, salt, pineapple juice, vinegar, and ketchup in a pan. I usually double these ingredients (except the sugar) so we have more sauce! Stir constantly over low heat until thickened and translucent.
  2. Add pineapple, onion, green peppers, and ham. Cook for 10 minutes until heated through.
  3. Serve over rice.

Tasty Treat Tuesday: Pumpkin Cake With Cider Caramel Sauce

I know I just did a pumpkin cake last week, but can you really blame me for wanting to try this one too?  Does it not look absolutely delicious to you?!  I am even willing to make an extra trip to the store just to buy canned pumkin for it, which is really saying a lot.  I never do that.  Thanks Mandy’s Recipe Box!

Here’s what you need to make this:
Pumpkin cake:

  • 1 c. sugar
  • 1 1/2 c. flour
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 3/4 c. oil
  • 1 (15 oz) can pumpkin
  • 2 eggs

Cider Caramel Sauce:

  • 1/2 c. brown sugar
  • 1 Tbsp. cornstarch
  • 2/3 c. apple cider
  • 2 Tbsp. heavy cream
  • 1 Tbsp. butter
  • salt to taste

Slow Cooker Cube Steak and Gravy Recipe

I’ve had a few different recipes for cube steak pinned on Pinterest for awhile and I’ve been wanting to try them.  It brings back memories of a recipe that my mom used to make when I was a kid using mushroom gravy and hamburger patties.  This recipe was a hit with my kids and with my husband, but I will say that the meat did dry out some after being in the slow cooker for so long (about 12 hours), so this is a recipe that I would say shouldn’t be left for more than 6-8 hours.

Slow Cooker Cube Steak and Gravy Recipe

A super easy recipe for cube steak that you can make in your slow cooker!
Ingredients
  • Cube Steak (we used a package with 4)
  • 2 cans cream of mushroom soup
  • 1 packet Beef Stew seasoning
  • 1 small can sliced mushrooms
  • ½ cup skim milk

Instructions
  1. Place cube steak in the bottom of a greased slow cooker.
  2. Mix mushroom soup, beef stew mix, mushrooms and milk together and pour over the steak in the slow cooker.
  3. Cook on low for 6-8 hours. You’ll have a nice gravy for your meat and your mashed potatoes!

Slow Cooker Baked Potato Soup

I first discovered baked potato soup when I was in college and one of my roommates made it for us.  I figured out a way to adapt her recipe so that I could make it in the slow cooker, and Slow Cooker Baked Potato Soup used to be a regular part of our menu rotation.  I realized as I was meal planning last month that it had been quite awhile since we had eaten it.  It’s easy to make an budget friendly, so I decided it was time to have it again!

Slow Cooker Baked Potato Soup

Super easy and filling baked potato soup that’s perfect for the fall and winter months!
Ingredients
  • 5 lb of potatoes, peeled, raw, and diced
  • 2 cans cream of chicken soup (we use the 98% fat free)
  • 2 cans chicken broth
  • ½ pound cooked bacon (I use real bacon piece to save time)
  • 1 package cream cheese
  • Garlic Powder (1 tsp)
  • Onion Powder (1 tsp)
  • Pepper (1 tsp)

Instructions
  1. Grease slow cooker. Place diced potatoes on bottom.
  2. Cube the cream cheese and place the pieces on top of the potatoes.
  3. Sprinkle garlic powder, onion powder, pepper, and the bacon over the top of the potatos.
  4. Add the cream of chicken soup and chicken broth and stir everything to mix it.
  5. Cook for 7-8 hours in crock pot on low.
  6. Before serving, I take a potato masher and mash the potatoes somewhat. We serve with a spoonful of sour cream and shredded cheese!

Cooking With Kids Thursday: Terrifying Tarantulas

I am so not a spider person so these kind of freak me out, but my kids would seriously think these are the coolest!  They are fairly easy to make and your kids will get plenty of practice writing their letter “v” while making the legs.  Thanks for the idea Better Homes and Gardens!
