Cooking With Kids Thursday: Valentine’s Snack Mix

Valentines snack mixLast year, I made this yummy Valentine’s Confetti for Valentine’s gifts and it was a huge hit with my kiddos teachers and classmates.  I had several people ask me for the recipe.  My kids want to make it again this year, but I wanted to see if there was a way to make it even better.  Well, I think I did with this Valentine’s snack mix from Glorious Treats!  Be careful though, it is extrememly difficult to simply have just a little taste of this stuff.  You might want to double batch it so there is still enough for gifts.

Here’s what you need to make this:

  • mini pretzels
  • popcorn (air-popped)
  • cereal (chex, cherrios, or your choice)
  • peanuts (or a nut of your choice)
  • M&Ms or other candies
  • sprinkles
  • candy melts (pink or white), or white chocolate

Tasty Treat Tuesday: Snickers Brownie Bites

snickers brownie bitesHere is a little tip for all my loved ones out there… I love Snickers!  The only thing I love more than Snickers?  Brownies!  If you put the two together, then you have pure deliciousness.   I just thought I would throw that out there in case anyone needed ideas for Valentine’s Day.  If anyone else out there feels the same as I do, then check out this amazing recipe for Snickers Brownie Bites.  Thanks to The Domestic Rebel for the recipe!

Here’s what you need to make these:

  • 1 box brownie mix, plus ingredients on back of box
  • 1 jar marshmallow fluff
  • 1 cup smooth peanut butter
  • 1 pkg Kraft caramels, unwrapped
  • 1 Tbsp heavy cream
  • 1 & 1/4 cup dry roasted peanuts
  • 1/2 pkg chocolate Candiquik or milk chocolate almond bark

Menu Planning Monday: my menu plan for the week of 2/3

We have now gone two weeks without eating out AT ALL!  I love that we’re saving money and having dinner together as a family, too!  This week, the bonus challenge for the weight loss group that I belong to is to not eat out all week, so I’m hoping I’ll go another week without eating out!

SUNDAY:  BBQ hot dogs and pasta salad

MONDAY:  Chicken enchilada casserole –  This is a recipe that my sister came up with. She uses canned chicken when she makes it. I usually cook my chicken in the slow cooker, but this week I actually have some leftover chicken from chicken ranch tacos, so I’m using that.

Ingredients:
2 chicken breasts (shredded) – or 1 can chicken
1 large can red enchilada sauce
corn tortillas
shredded cheese – I use reduced fat

Directions: (this is what I do) – I put my chicken and the enchilada sauce in the crockpot the night before and then shred it when I get up in the morning. If you are using canned chicken, you can just shred it as you are making the casserole. I spread some of the chicken/sauce mixture along the bottom of the casserole dish so it doesn’t stick. Break corn tortillas into four pieces and layer across the bottom of the casserole dish. Spread a layer of the chicken/sauce mixture and cheese. Add another layer of corn tortillas. Continue until you are out of the chicken/sauce mixture. Bake at 350 degrees for 25-30 minutes until the cheese is bubbly.

TUESDAY:  Hobo StewThis is an easy slow cooker recipe.  It’s like beef stew but with meatballs!

WEDNESDAY:  Easy Sweet & Sour pork recipe – This is a recipe from my mother in law.  It’s quick and easy to make and kid friendly, too!

THURSDAY:  Melt in Your Mouth Meatloaf – This is a favorite recipe in my house and I love it because you can just dump it in the slow cooker and let it cook all day!

FRIDAY:  Oven Tacos – My family loves tacos, and I’m always looking for new recipes to try.  I found this one on Pinterest a few weeks ago and can’t wait to try it!

 

SATURDAY:  Slow Cooker Lasagne – I’ve had this on my “to try” list for awhile, and since I’m off work today, I figured it would be a good day to try it!

Cooking With Kids Thursday: Valentine’s Day Marshmallow Pops

Marshmallow PopsThese Valentine’s Marshmallow Pops would make such cute gifts for classmates!  The thing I love the most about it is that my kiddos can make these all on their own.  There are so many super cute valentine’s ideas out there, but most of them involve me doing all the work.  I know that the classmates appreciate the end result, but I want my kids to have more ownership in the gifts this year.  We are going to have a blast making these!  I just won’t think about the mess… at least not until we are done with all the fun.  Thanks Mommy Gaga!

  • Toppings (coconut, sprinkles, crushed graham crackers, etc)

Tasty Treat Tuesday: Churro Waffles

My husband and I absolutely love churros!  My fond affection for these delicious treats began when I was very young, but my husband didn’t have the pleasure of tasting one until our Honeymoon at Disneyland.  Once he took his first bite, there was no going back.  We had churros with every meal for the next three days!  Unfortunately, churros are not really the kind of thing that you can easily whip up at home so we haven’t really had many over the last ten years.  I am excited to try out this recipe for Churro Waffles.  They look so yummy and just might be the perfect thing to cure my frequent churro cravings.  Thanks Chica Chocolatina Bakeshop!

Here’s what you need to make these:

For the waffles:

  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 1 1/2 cups warm milk
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla extract
  • 3shakes  of cinnamon plus

For the churro topping

  • 1 cup of white sugar
  • 1/2 cup cinnamon
  • 1/2 cup of melted butter
