I have calculated Weight Watchers points values using the e-tools Recipe Builder, and points values this week are based on the new Points Plus program! If you’ve been reading my blog for awhile, then you know that for the past two years, I have done a $40 weekly budget. With the changes to our eating habits, I’m going to increase our budget to $50 per week and I’m really going to try to stick to that, but I’m not even sure that will be enough. This will be a trial and error experience, so stay tuned!

SUNDAY: Soup – we’ve still got sickness in our house, including my husband and I, and the only thing I had the energy to make was canned Progresso soup – on a bright note, it reminded me that I didn’t announce a winner to the Progresso giveaway, so I’ll be doing that today!

MONDAY:  Lemon chicken saute – This recipe has come to be known as “Grandma’s chicken” around our house because it was a recipe from my husband’s grandmother that his mom used to make for them

Ingredients:
4 boneless, skinless chicken breasts (this is what we need for our family, adjust accordingly for yours)
3 T all purpose flour
PAM no-stick cooking spray
1/3 cup butter or margarine (we use I Can’t Believe It’s Not Butter)
1/3 cup teriyaki sauce
3 T lemon juice
1 tsp minced garlic
1/2 tsp sugar

Roll chicken in flour to coat. Spray large skillet with Pam or other cooking spray. Add butter and melt over medium heat. Add chicken breast and saute till lightly browned on one side. Turn and brown on second side, 5-7 minutes, or until lightly browned. Remove chicken and set aside. Stir teriyaki sauce, lemon juice, garlic and sugar into skillet. Return chicken to pan and simmer 3 minutes. Turn chicken over, and continue cooking until fork tender (2-3 minutes)

Serve over cooked rice.

WW points – 6 points per serving with chicken; 3 points for 1/2 cup brown rice or 5 points for 1 cup brown rice with rice, 1 point for the asparagus recipe below

Serve with Baked Asparagus with Balsamic Butter Sauce – I got this recipe from Marci’s blog and it is YUMMY!

Ingredients:
1 bunch fresh asparagus
cooking spray
salt and pepper to taste
2 T. butter (We use I Can’t Believe It’s Not Butter)
1 T. soy sauce
1 t. Balsamic vinegar

Directions:
Preheat oven to 400 degrees. Snap ends off of washed asparagus and place on baking sheet. Coat with cooking spray and season with salt and pepper. Bake for 12 minutes or until tender. Melt the butter in a sauce pan or in the microwave. Stir in soy sauce and Balsamic vinegar. Pour over baked asparagus and serve.


TUESDAYSteak stroganoff (slow cooker) – This is a family favorite!

Ingredients:
2T flour
1/2 tsp Garlic powder
1/2 tsp pepper
1/2 tsp paprika
1 3/4 lb. boneless round steak
2 cans 10 3/4 oz cream of mushroom soup (I use 98% FF)
2 c. water (or 1 can 100% FF beef broth for more flavor)
1 envelope beef stew mix
4 oz can mushrooms, sliced and drained
1/2 c. sour cream
1 T minced parsley

Combine flour, garlic powder, pepper, and paprika in slow cooker. Cut meat into 1 1/2 inch strips. Place in flour mixture and toss until meat is well coated. Add soup, water, and stew mix. Stir until well blended. Cover and cook on low 6-7 hours. Stir in mushrooms, sour cream, and parsley and then cook on high 10-15 minutes until heated through. Serve over egg noodles. (Depending on the consistency of the sauce, you may need to add cornstarch to thicken or add more water/broth to thin)

To freeze: Pour into gallon freezer bags (I used Ziploc containers for this one). Allow to cool before freezing.

To reheat: Thaw in refrigerator overnight. Warm on stove and serve over rice or egg noodles. (Add sour cream when warming if you left it out of the initial recipe)

WW points = 7 points/serving, 6-8 servings (add 3 points for 1/2 c. cooked pasta or 5 points for 1 cup)

Sides = green beans and green salad

WEDNESDAY:  Black bean and chicken burritos (slow cooker) – This is another family favorite that is SUPER easy to make!

Ingredients:
1 taco/fajita seasoning packet
2 cans black beans, drained
2-3 chicken breasts
1 can green enchilada sauce

Place chicken breasts in bottom of the crockpot and then add remaining ingredients. Cook on low 6-8 hours. Shred chicken before serving and serve in tortillas. We add cheese, sour cream, etc. to the tortillas. We sometimes add rice (cooked rice to the mixture once we’re ready to serve, not in the crockpot!). This is also really good if you use beef instead of the chicken!

WW points = 6 points er serving (does not include the tortillas)

THURSDAYMelt in your mouth meatloaf (slow cooker) – I’ve made this several times now for our family.  It’s easy to make and yummy!

Ingredients:
2 eggs
3/4 c. milk (we use skim)
2/3 c. seasoned bread crumbs
2 tsp dried, minced onion
1 tsp salt
1/2 tsp rubbed sage
1 1/2 pounds ground beef (we always make this with ground turkey instead and it’s yummy!)
1/4 c. ketchup
2 T brown sugar
1 tsp ground mustard
1/2 tsp Worcestershire sauce

Directions
1. In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well (mixture will be moist.) Shape into a round loaf; place in a 5-qt. slow cooker. Cover and cook on low for 5-6 hours or until a meat thermometer reads 160 degrees F.

2. In a small bowl, whisk the ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over the meat loaf. Cook 15 minutes longer or until heated through. Let stand for 10-15 minutes before cutting.

WW points = 5 per serving with the ground turkey, ground beef may be more (makes 6 servings)

Sides – Sour cream mashed potatoes (4 pts) and green beans (0 pts)

FRIDAY:  No Guilt cheese enchiladas – I got this recipe in an e-mail from Spark People

Ingredients:
12 8-inch Corn Tortillas
1 cup shredded Mexican four cheese blend
1/2 cup fat-free cottage cheese
3/4 cup chopped white onions
1/2 cup part-skim ricotta
1 can (19 ounces) enchilada sauce
2 Tbsp diced green chilies
3 Tbsp sliced black olives

Directions:

Step 1:
Soften the tortillas. Normally, tortillas are softened by lightly frying them in hot oil. Skinny enchiladas skips this step…and all the fat!

Pour the enchilada sauce in a skillet and heat. Dip each tortilla in the hot sauce, coating each side, for a few seconds. Shake off and place on microwavable platter, 3 or 4 at a time, making sure that they do not overlap. Microwave for 20-40 seconds, until soft. (Time will vary according to your microwave oven.) Set aside to cool.

Step 2:
In a bowl, mix 3/4 cup finely chopped onion (about 1/2 a large onion), ricotta, cottage cheese, green chiles (mild or hot, to taste), and salt and pepper to taste. Add half the shredded cheese (1/2 cup.) Mix with fork until ingredients are blended.

Step 3:
Spray a rectangular casserole dish with non-stick spray.
Place approximately 1/12th of the cheese mixture (about 1/4 cup) on a tortilla and loosely roll. Place seam side down in casserole dish. Repeat until all tortillas are filled. Spread remaining enchilada sauce evenly over the enchiladas.

Step 4:
Bake for 15 minutes in an oven preheated to 350 degrees Fahrenheit. After 15 minutes, remove and evenly spread the remaining cheese and the black olives on top. Return to oven for 10 more minutes.

Serve hot.

WW points = 6 per serving (2 enchiladas per serving)
Number of Servings: 6

SATURDAY:  Baked chicken with parmesan and herbs

Ingredients:
4 skinless chicken breasts (I used 8 skinless thighs)
1 C. seasoned bread crumbs
2/3 c.
Parmesan cheese
(I use freshly grated parmesan)
1/2 C. butter
1 tsp
Dijon mustard
1 tsp. Worcestershire
1 tsp.
minced garlic

Instructions
Preheat oven to 400 degrees. Combine bread crumbs, parmesan cheese, and salt. In a saucepan, melt butter & stir in mustard, Worcestershire and garlic. Remove from heat. Dip chicken in butter, then roll in bread crumb mixture. Place in shallow baking pan. Bake 1 hour or until golden

SUNDAY:  Rice meatballs – This is a recipe from my mother in law.  I’m going to make the meatballs before I go to work so all I have to do is cook them when I get home!

Ingredients:
1 cup uncooked minute rice
1 lb ground beef (I use 93/7)
1 egg, slightly beaten
2 t. grated onion
2 t. salt (I cut this in half)
1/8 t marjoram
dash pepper
2 1/2 cups tomato juice (or two 8 oz cans tomato sauce mixed with 1/2 cup water)
1/2 t sugar

Combine rice and all other ingredients except tomato juice and sugar. Form balls and arrange in skillet. Pour tomato juice & sugar over meatballs. Bring to boil. Reduce heat & simmer uncovered 15 minutes. 

WW points = 7 points per serving
Sides = green beans and green salad

MONDAY:  Spinach and Ricotta Stuffed Shells – I’m not a big fan of crowds, so we’re eating in this Valentine’s Day.  I got this recipe from All You Magazine and decided to try it out.  My husband loves manicotti, but I don’t make it often because I hate stuffing the shells.  This is basically the same thing but SO much easier.  It was a hit with everyone and my daughter declared that “It’s a keeper.”

Ingredients
* 24 jumbo pasta shells
* 1 15-oz. container ricotta
* 2 cups shredded mozzarella
* 1/2 cup shredded Parmesan
* 1 10-oz. package frozen chopped spinach, thawed and squeezed dry
* 1 large egg, lightly beaten
* Salt and pepper
* 1 teaspoon Italian seasoning
* Pinch of ground nutmeg
* 1 26-oz. jar spaghetti sauce

Preparation
1. Preheat oven to 375ºF. Mist a 9-by-13-inch baking dish with cooking spray. Cook pasta shells according to package label directions; drain and set aside to cool. While pasta cooks, in a large bowl, stir together ricotta, 1 cup mozzarella, Parmesan, spinach, egg, salt, pepper, Italian seasoning and nutmeg.

2. Spread 3/4 cup spaghetti sauce over bottom of baking dish. Stuff shells with cheese-and-spinach mixture and place in dish. Spoon remaining sauce over shells and sprinkle with remaining 1 cup mozzarella.

3. Cover baking dish with foil and bake for 35 minutes. Remove foil and bake about 10 minutes longer, until bubbly and cheese begins to brown.

WW points = 12 points per serving (makes 6 servings)
Sides = Roasted parmesan asparagus and watermelon

TUESDAY:  Beef tips (slow cooker) – I found this recipe in Taste of Home Magazine. We have eaten it a few times now and my whole family (even my picky eater kids) loves it!

Ingredients:
1 beef top sirloin steak (1 pound), cut into 1-inch cubes
2 to 3 medium carrots, chopped
1 to 1-1/2 cups chopped celery
1 cup chopped onion
1 can (10-3/4 ounces) condensed golden mushroom soup, undiluted
1/2 to 1 cup white wine or beef broth
2 teaspoons cornstarch
1/4 cup cold water
Hot cooked egg noodles

Directions:
In a 3-qt. slow cooker, combine the beef, carrots, celery, onion, soup and wine or broth. Cover and cook on low for 6-7 hours or until meat is tender.

Combine cornstarch and water until smooth; gradually stir into cooking juices. Cover and cook on high for 15 minutes or until thickened. Serve with noodles. Yield: 4 servings.

WW points = 6 per serving (add 3 points for 1/2 cup pasta/rice or 5 points for 1 cup pasta/rice)
Sides = green salad, cantaloupe

WEDNESDAYEnchilada soup – The original recipe is meant to be cooked on the stove, but I have adapted it to cook in the slow cooker

Ingredients:
4-5 boneless/skinless chicken breasts
1 can Rotel
1 can stewed tomatoes
1 can enchilada sauce (I prefer red for this soup)
1 T chili powder
1 tsp cumin
1 medium onion, diced
1 T minced garlic
1 can chicken broth
8 oz Velveeta
1 can chopped/peeled chilis
8 oz sharp cheddar cheese, shredded
7-8 corn tortillas (sliced lengthwise in pieces)

Directions:
Add chicken (I use frozen usually), Rotel, tomatoes, enchilada sauce, chili powder, cumin, onion, garlic, chicken broth, and chilis.  Cook on low 6-8 hours.  Then, I shred the chicken breasts and add the Velveeta about an hour before serving and cook until it is melted well.  I serve with the corn tortillas and the shredded cheddar cheese.

FRIDAY:   Cheesy ham pasta bake – This recipe originally comes from Finding Joy in My Kitchen

Cheesy Ham and Pasta Bake – Inspired by Tiffanee at One Crazy Cookie

1 lb. whole wheat penne pasta
2 C extra sharp cheddar cheese
1 1/2 C diced ham
8oz. mushrooms, sliced
4 T white wheat flour
3 C milk* (divided)
1/4 tsp. pepper. 

Begin by boiling the pasta according to package directions.  Then, mix together 1 C milk and flour in a large measuring cup. Meanwhile, saute the mushrooms in a large skillet with a little olive oil, if necessary.  When mushrooms are cooked, remove from the pan and toss with diced ham. In the same skillet, pour the milk mixture into the pan. Stir constantly, adding additional milk to reach desired thickness (I ended up adding ~1C milk to the mixture) while warming the mixture so that it thickens. Simmer about 3 minutes.   Add in the ham and mushroom mix, and simmer until ham warms.  Then, add in 3/4 of the shredded cheese.  Spread the pasta into a 9×13 glass baking dish. Pour the cheesy sauce over the pasta.  Stir to coat. Then, sprinkle with remaining cheese.  Stick the dish into a warm oven… about 300 degrees, for 10 minutes, until the cheese on the top melts.

WW points = 12 per serving
Sides = cantaloupe, broccoli

Welcome! One of my New Year’s “goals” was to eat healthier, and so I’m trying to incorporate healthier recipes all around into our menu plan. My husband was gung ho at first, but then informed me that we have been eating WAY too much chicken, so I’ve tried to find recipes to give us a little bit of variety!

SUNDAY: Taco soup

Ingredients:
1 1/2-2 lb. ground meat (I use 1 lb and 93/7)
1 packet Ranch dressing seasoning mix
1 packet taco seasoning
1 can corn
1 can pinto beans
1 can Ranch style beans
1 can diced tomatoes
1 can tomato sauce (8 oz)
1 can Rotel
1 can water

Brown the meat and then add combine the meat and other ingredients in a crock pot and to cook it on low all day. When we’re ready to eat, I will serve it with tortilla chips, sour cream, and cheese.

NOTES: With just one can of water, it will be very thick. Add more if you want it thinner. I drain the corn and pinto beans before adding them. I don’t drain the Ranch style beans because they are seasoned!

WW points per serving = 8 points per serving (this does not include any toppings you add)

MONDAY: Lemon thyme chicken – This is a “new” recipe for us that comes from Taste of Home.  I’ve never had a bad experience with a Taste of Home recipe, so I’m hoping this one doesn’t disappoint.

Ingredients:
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (4 ounces each)
2 teaspoons olive oil
1 medium onion, chopped
1 tablespoon butter
1/2 teaspoon dried thyme
1 cup chicken broth
3 tablespoons lemon juice
2 tablespoons minced fresh parsley

Directions:
In a small bowl, combine the flour, salt and pepper. Set aside 4-1/2 teaspoons for sauce. Sprinkle the remaining flour mixture over both sides of chicken. In a large nonstick skillet coated with cooking spray, cook chicken in oil over medium heat for 7-9 minutes on each side or until juices run clear. Remove and keep warm.

In the same pan, saute onion in butter until tender. Add thyme and reserved flour mixture; stir until blended. Gradually stir in the broth and lemon juice, scraping up any browned bits from bottom of pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over chicken. Sprinkle with parsley. Yield: 4 servings.

Nutrition Facts: 1 chicken breast half with 3 tablespoons sauce equals 213 calories, 8 g fat (3 g saturated fat), 70 mg cholesterol, 614 mg sodium, 10 g carbohydrate, 1 g fiber, 25 g protein. Diabetic Exchanges: 3 very lean meat, 1 fat, 1/2 starch.

WW points = 5 per serving
Side = Roasted parmesan asparagus

TUESDAY:  Cream cheese chicken (slow cooker) – this is a family favorite

Ingredients:
2-3 boneless skinless chicken breasts
Salt and pepper (to taste)
2 pkg. dry Ranch or Italian dressing mix (we usually only use one)
1 can cream of chicken soup
8 oz. cream cheese – cut into cubes (I use the 1/3 less fat kind)
½ c. chicken broth

Directions: Brush chicken with butter and sprinkle with salt and pepper. Place in crock pot and sprinkle 1 pkg. dry mix over all. Cover and cook on low for 6-7 hours. About 45 minutes before serving, add soup, second packet of dry dressing mix, cream cheese, and chicken broth. Cook until smooth.
Serve over rice or pasta.

WW points = 8 points per serving (add 3 points for 1/2 cup rice or pasta or 5 points for 1 cup rice or pasta)
Side = green salad and sliced canteloupe

WEDNESDAY:  Chili (slow cooker) – this was another request from my husband

Ingredients:
1 lb ground beef (brown in skillet and then place in crockpot)
1 can dark kidney beans (drained and rinsed)
1 can Ranch style beans
1 can diced tomatoes
1 can crushed tomatoes
1 packet chili spices

Mix all ingredients in crockpot and cook on high for 5 hours or low for 8 hours. Sprinkle cheese on top.

WW points = 7 points per serving (6-8 servings) – cheese and any additional toppings are “extra”
Sides = cornbread biscuits and fruit

FRIDAY:  Braised pork chops – I got this recipe from my mother in law awhile ago – I think she may have gotten it from a Martha Stewart magazine (or online)

Ingredients:
2 T. veg. oil
6 boneless center cut pork chops trimmed of fat are preferable (but any will do)
1 teas. Dijon Mustard
1T red-wine vinegar
2 T. light brown sugar
1teas. garlic salt
1 T. worcestershire OR soy sauce

Heat oil in a lg. heavy skillet over med. high heat.
Brown chops on each side 2 to 3 minutes.

Meanwhile, in a bowl, site together all other ingredients with 1/3 cup water. Pour over chops. Reduce heat, cover and cook until tender, about 1 hour.

Transfer chops to a serving dish. Raise heat to med. high and cook sauce until thickened….about 5 minutes. Pour over chops and serve.

WW points = 5 points per serving, add 5 points for 1 cup brown rice or 3 points for 1/2 cup brown rice
Sides:  carpese salad and green beans

2 1/2 cups tomato juice (or two 8 oz cans tomato sauce mixed with 1/2 cup water)
1/2 t sugar

Combine rice and all other ingredients except tomato juice and sugar. Form balls and arrange in skillet. Pour tomato juice & sugar over meatballs. Bring to boil. Reduce heat & simmer uncovered 15 minutes.

Menu Planning Monday: my menu plan for the week of 1/30


Welcome! One of my New Year’s “goals” was to eat healthier, and so I’m trying to incorporate healthier recipes all around into our menu plan. My husband was gung ho at first, but last night informed me that we’ve been eating a LOT of chicken and asked could we please add some beef to the menu this week!

The plan listed here just includes our dinner menu and recipes. I have calculated Weight Watchers points values using the e-tools Recipe Builder, and points values this week are based on the new Points Plus program! Both kids eat breakfast at home, but my son eats lunch at daycare, my daughter eats lunch at

If you’ve been reading my blog for awhile, then you know that for the past two years, I have done a $40 weekly budget. With the changes to our eating habits, I’m going to increase our budget to $50 per week and I’m really going to try to stick to that, but I’m not even sure that will be enough. This will be a trial and error experience, so stay tuned!

SUNDAY: Hamburgers

MONDAY: Monterey Chicken

Ingredients:
4 (5 oz.) Boneless Skinless Chicken Breasts1/4 Cup Barbecue Sauce
1/4 Cup Hormel Real Bacon Bits
1 Cup 2% Colby and Monterey Jack Shredded Cheese*
1 (14 oz.) Can Diced Tomatoes with Green Chilies, drained (I’m just going to use regular diced tomatoes)
Sliced Green Onions
Pepper

Preheat oven to 400 degrees. Pound out the chicken breasts to flatten. Season each with a little pepper. Cook the chicken in a skillet sprayed with non-stick cooking spray over medium-low heat until no longer pink.

Place each breast onto a baking sheet and top each breast with 1 tablespoon of barbeque sauce, 1/4 cup cheese, 1/4 cup tomatoes, green onions and 1 tablespoon of bacon bits. Place into the oven and bake until the cheese has melted (about 5 minutes).

Per Serving: 263 Calories; 8g Fat (29.0% calories from fat); 39g Protein; 6g Carbohydrate; 1g Dietary Fiber; 108mg Cholesterol; 840mg Sodium. Exchanges: 4 1/2 Lean Meat; 0 Other Carbohydrates.

WW points = 6 points per serving

TUESDAY: Hawaiian chicken bowls – I saw this recipe on Marci’s blog last week and it sounded yummy and looked kid friendly (I think anything with ranch dressing is kid friendly!)

Ingredients:
6 boneless, skinless chicken breasts (I used 3)
1 can (8 oz) crushed pineapple (I used lite)
1 bottle (16 oz) [gf] barbecue sauce (I used lite)
4-6 cups rice, cooked (I used 1/2 white and 1/2 brown)
Steamed broccoli
Ranch dressing

Directions:
Place meat in 3 1/2-5 quart slow cooker. Combine pineapple and barbecue sauce and pour over meat. Cook on high heat for 3-4 hours or on low for 6-8 hours. Layer in bowls: rice, chicken, broccoli, and a little ranch dressing. Makes 4-6 servings.

WW points = 6 per serving; add 5 points for 1 cup brown rice or 3 points for 1/2 cup


WEDNESDAY: Taco soup

Ingredients:
1 1/2-2 lb. ground meat (I use 1 lb and 93/7)
1 packet Ranch dressing seasoning mix
1 packet taco seasoning
1 can corn
1 can pinto beans
1 can Ranch style beans
1 can diced tomatoes
1 can tomato sauce (8 oz)
1 can Rotel
1 can water

Brown the meat and then add combine the meat and other ingredients in a crock pot and to cook it on low all day. When we’re ready to eat, I will serve it with tortilla chips, sour cream, and cheese.

NOTES: With just one can of water, it will be very thick. Add more if you want it thinner. I drain the corn and pinto beans before adding them. I don’t drain the Ranch style beans because they are seasoned!

WW points per serving = 8 points per serving (this does not include any toppings you add)

THURSDAY: Country Ham and Macaroni Casserole – My entire family has been BEGGING for this!

Ingredients:
1 lb country ham slices or regular smoked ham in one piece (I just use whatever leftover ham we have on hand)
1 large onion, diced
1 lb elbow macaroni (whole wheat)
2 cups shredded extra sharp cheddar cheese (8 oz) – I use reduced fat
1 cup sour cream (I use reduced fat)
1 can cream of chicken soup (I use 98% fat free)
1/4 cup (1/2 stick) margarine, melted (I don’t use this when I make it)
1 cup dry plain bread crumbs

1. Heat oven to 400º.
2. Bring 4 quarts water and ham to boiling in large pot. Once water begins to boil,
remove ham to a plate. Add onion and macaroni to pot. Return water to boiling; cook 8 minutes, stirring occasionally.
3. Coarsely chop ham, discarding any fat and bones.
4. Drain macaroni and onion and return to pot. Add ham, cheese, sour cream and soup. Scrape into a 13x9x2 baking dish. Pour melted margarine over top. Sprinkle with bread crumbs.
5. Bake in heated 400º oven 30 minutes or until heated through and top is golden brown.
Let stand 5 minutes before serving.

Note: Prepare in two 8×8 casserole dishes, bake one and freeze one (unbaked) for another day. If freezing, top with crumbs and margarine right before baking.

WW points = 9 points per serving (with modifications above), makes 6 servings


FRIDAY: Beef tips (slow cooker) – I found this recipe in Taste of Home Magazine. We have eaten it a few times now and my whole family (even my picky eater kids) loves it!


Ingredients:
1 beef top sirloin steak (1 pound), cut into 1-inch cubes
2 to 3 medium carrots, chopped
1 to 1-1/2 cups chopped celery
1 cup chopped onion
1 can (10-3/4 ounces) condensed golden mushroom soup, undiluted
1/2 to 1 cup white wine or beef broth
2 teaspoons cornstarch
1/4 cup cold water
Hot cooked egg noodles

Directions:
In a 3-qt. slow cooker, combine the beef, carrots, celery, onion, soup and wine or broth. Cover and cook on low for 6-7 hours or until meat is tender.

Combine cornstarch and water until smooth; gradually stir into cooking juices. Cover and cook on high for 15 minutes or until thickened. Serve with noodles. Yield: 4 servings.

WW points = 6 per serving (add 3 points for 1/2 cup pasta/rice or 5 points for 1 cup pasta/rice)


SATURDAY: California Combo – I found this recipe on Marci’s blog awhile ago. It’s pretty quick and easy to make and my family loves it. We’ve got some zucchini to use up, and I saw this great recipe for Guiltless Baked Zucchini on Favorite Family Recipes this week, so I thought we’d try it out.

Ingredients:
– about 8 oz. noodles, cooked (I used my GlutenFree Penne)
– 1 lb. hamburger
– 1/2 c. onion, diced
– 1 c. sour cream (I use FF)
– 8 oz. cream cheese (I use reduced fat)
– 1 jar (1 lb. 10oz) spaghetti sauce
– 4 green onions, diced
– cheddar cheese to top dish

Directions:
– Cook beef and onion in sauce pan, drain. Stir jar of sauce into pan and heat through.
– Sautee green onions in a little butter.
– Cream together sour cream and cream cheese. Stir green onions into mixture.
– In lightly greased casserole dish layer noodles, cream cheese mixture and meat mixture. Repeat layers again and top with enough shredded cheese to cover top.
– Bake at 350 degrees for 20-25 minutes.
I actually cooked 16 oz. noodles tonight but only used about half of them. I like to go heavy on the sauces, otherwise you may be able to do a 9×13 dish. I had enough for an 8×8 and then a little extra as shown. The cream cheese mixture is what makes this sooo good!

Guiltless Baked Zucchini
1-2 large zucchini, cut into spears or circles (the zucchini we had was HUGE so we just used one)
2 eggs
1-2 Tbsp. milk
1 c. Italian-style bread crumbs or croutons blended up finely in a blender (we ran out of bread crumbs so we did the crouton thing)
1/2 c. parmesan cheese
Salt and Pepper to taste
Butter or cooking spray

First, line a baking sheet with foil and spray evenly with cooking spray. Next, combine eggs and milk in a bowl. In a separate bowl, combine bread crumbs, Parmesan cheese, and salt & pepper. Dip each zucchini piece into the egg mixture, then dip into bread crumbs until evenly coated in crumbs. Place zucchini on baking sheet, spray each with cooking/butter spray and then bake in the oven at 425-degrees for about 10-12 minutes or until golden brown. For an added crisp, turn the oven to broil and cook for about 30-45 seconds longer (don’t let em’ burn though, watch them closely). Remove from oven and serve hot with ranch dressing or marinara/pizza sauce.

SUNDAY:  Turkey meatballs with whole wheat pasta and marinara sauce – I was looking for a good turkey meatballs recipe and Brittany (Frugal in Fargo) suggested this one from Taste of Home.  I’ve never had a bad experience with a Taste of Home recipe, so I figured it was worth checking out!  I loved it, but my six year old daughter said she liked the “old, not so healthy meatballs” better 🙂

Ingredients
* 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
* 1 egg, beaten
* 1 cup soft bread crumbs
* 2 tablespoons grated onion
* 1 teaspoon seasoned salt
* 1 pound ground turkey
* Tomato wedges, optional

Directions
* In a bowl, combine spinach, egg, bread crumbs, onion and seasoned salt. Add turkey and mix well. Shape into 2-in. balls. Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 400° for 20 minutes or until the meat is no longer pink. Drain on paper towels. Garnish with tomato wedges if desired. Yield: 4 servings. (it lists the serving size as 3 each and this made 20 meatballs for us, so it would actually be almost 7 servings)

WW points = 4 points per serving (add 4 pts per cup of whole wheat pasta or 2 pts for 1/2 cup plus 3 points per cup of marinara sauce)
Sides = green beans and green salad

MONDAY:  French dip sandwiches (slow cooker) – This is a family favorite and I love it because it is SOOO easy to make!

Ingredients:
beef roast
2 cans beef broth
1 tsp dried rosemary
1 tsp dried thyme
1 tsp garlic powder
4-6 hoagie buns
(we also add some swiss or provolone cheese)

Place roast in a greased slow cooker. Pour broth over the top of the roast. Add spices. Cover and cook on low heat 8-10 hours (or high heat 5-7 hours). Remove roast and save extra juice. With a fork, break the meat apart and serve on hoagies. Use excess juice for dipping sandwiches.

WW points = 7 points per serving (this does not include the cheese or the buns, add 2 points for the cheese and 4 points for the whole wheat bun – I think I’m going to try mine without a bun or on pita bread)

TUESDAY:  Melt in your mouth meatloaf (slow cooker) – I’ve made this several times now for our family.  It’s easy to make and yummy!

Ingredients:
2 eggs
3/4 c. milk (we use skim)
2/3 c. seasoned bread crumbs
2 tsp dried, minced onion
1 tsp salt
1/2 tsp rubbed sage
1 1/2 pounds ground beef (we always make this with ground turkey instead and it’s yummy!)
1/4 c. ketchup
2 T brown sugar
1 tsp ground mustard
1/2 tsp Worcestershire sauce

Directions
1. In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well (mixture will be moist.) Shape into a round loaf; place in a 5-qt. slow cooker. Cover and cook on low for 5-6 hours or until a meat thermometer reads 160 degrees F.

2. In a small bowl, whisk the ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over the meat loaf. Cook 15 minutes longer or until heated through. Let stand for 10-15 minutes before cutting.

WW points = 5 per serving with the ground turkey, ground beef may be more (makes 6 servings)

Sides – Sour cream mashed potatoes (4 pts) and green beans (0 pts)

THURSDAY:  Creamy chicken enchiladas – It’s my husband’s birthday and this was his pick!.

Ingredients:
1 can cream of chicken soup (I use the 98% FF kind)
1 can cream of mushroom soup (I use the 98% FF kind)
2 cans green enchilada sauce
1 8 oz-16 oz. tub of sour cream (depends how spicy you want the enchiladas)
2-3 chicken breasts, shredded (if I’m in a hurry, I use canned chicken)
8 oz cheese, shredded
1 dozen flour tortillas (you could use corn also) – we are using whole wheat!

Add cream of chicken soup, cream of mushroom soup, and enchilada sauce to a pan. Cook on medium low heat, stirring occasionally. When sauce is will mixed and starts to thin, add sour cream. Continue stirring occasionally until the sauce is well mixed and thinned out. Place a layer of the sauce along the bottom of a 9X13 baking dish. Fill each tortilla with the shredded chicken, sauce, and cheese. Roll and place in the baking dish. When you have filled all of the tortillas (this should make 1 dozen), pour the remain sauce over the top of the enchiladas and then cover with cheese. Bake at 350 degrees for 25-30 minutes until the cheese is well melted.

WW points = 6 points per enchilada
Sides:  green beans and green salad

FRIDAY:  Chili (slow cooker) – this was another request from my husband

Ingredients:
1 lb ground beef (brown in skillet and then place in crockpot)
1 can dark kidney beans (drained and rinsed)
1 can Ranch style beans
1 can diced tomatoes
1 can crushed tomatoes
1 packet chili spices

Mix all ingredients in crockpot and cook on high for 5 hours or low for 8 hours. Sprinkle cheese on top.

WW points = 7 points per serving (6-8 servings) – cheese and any additional toppings are “extra”
