Tasty Treat Tuesday: No-Bake Chocolate Pumpkin Mousse Pie

I think in previous posts, I have made it pretty clear that I HATE pie.  This causes huge problems in our house, considering my husband loves pie more than any other dessert.  With Thanksgiving coming up I am trying to find a way out of having to make and eat the traditional pumpkin pie.  Yuck!  This no-bake chocolate pumpkin mousse pie just might be the perfect compromise.  The no-bake part is what caught my eye first.  Yes, I am that lazy.  Then of course there is chocolate and we all know that chocolate makes everything better.  I also like that there is not a traditional pie crust.  That is what I hate the very most about pies.  Thanks for the recipe Serious Eats!

Here’s what you need to make this pie:

For the Chocolate Cookie Crust:

  • 6 ounces chocolate wafer cookies (about 27 wafers)
  • 2 tablespoons light brown sugar
  • 7 tablespoons unsalted butter, melted

For the Pumpkin Mousse:

  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 1/4 cup pumpkin puree
  • 1 tablespoon pure vanilla extract
  • 1 cup heavy cream

For the Spiced Cocoa Whipped Cream

  • 1 cup heavy cream
  • 3 tablespoons granulated sugar
  • 2 tablespoons cocoa powder
  • pinch ground cinnamon
  • pinch ground nutmeg
  • pinch ground cloves

For the Garnish:

  • 3 ounce bar bittersweet chocolate

  • 1 stick of butter
  • 1/4 tsp. vanilla extract
  • 1 8 oz. package of cream cheese
  • 1 egg

Tasty Treat Tuesday: Pumpkin Cake With Cider Caramel Sauce

I know I just did a pumpkin cake last week, but can you really blame me for wanting to try this one too?  Does it not look absolutely delicious to you?!  I am even willing to make an extra trip to the store just to buy canned pumkin for it, which is really saying a lot.  I never do that.  Thanks Mandy’s Recipe Box!

Here’s what you need to make this:
Pumpkin cake:

  • 1 c. sugar
  • 1 1/2 c. flour
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 3/4 c. oil
  • 1 (15 oz) can pumpkin
  • 2 eggs

Cider Caramel Sauce:

  • 1/2 c. brown sugar
  • 1 Tbsp. cornstarch
  • 2/3 c. apple cider
  • 2 Tbsp. heavy cream
  • 1 Tbsp. butter
  • salt to taste

Tasty Treat Tuesday: Pumpkin Angel Food Cake


I think it is time to start sharing all those yummy pumkin dessert recipes.  There is such a short time period every year to cook with pumpkin so I have to make the most of it!  I just love the smell of pumpkin.  This pumpkin angel food cake looks absolutely delicious.  Now I have a use for the angel food cake tin that my mother in law gave me several years ago.  Thanks Betty Crocker recipes!

Here’s what you need to make this:

Cake

  • 1 box (1 lb) Betty Crocker® white angel food cake mix
  • 1 tablespoon Gold Medal® all-purpose flour
  • 1 1/2 pumpkin pie spice
  • 3/4 cup canned pumpkin (not pumpkin pie mix)
  • 1 cup cold water
Ginger-Cream Filling
  • 2  cups whipping cream
  • 1/4 cup powdered sugar
  • 2 tablespoons finely chopped crystallized ginger

Tasty Treat Tuesday: Apple Muffins!

Last week my daughter was learning about apples in preschool and had to take in a treat made from apples to share with everyone.  I dont’ really bake/cook with apples so I was kind of at a loss, until I came a cross this recipe for apple muffins.  It is a pretty basic recipe and didn’t take me long to make at all.  They were also super yummy!  My whole family loved them and they were a huge hit at the preschool.  Thanks The Girl Who Ate Everything!

Here’s what you need to make these:

  • 2 cups sugar (or use 1 1/2 cups for a less sweet muffin)
  • 2 eggs 1 cup oil
  • 1 Tablespoon vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 cups peeled, cored, diced apples (around 3 apples)
  • Brown sugar for topping (around 1/2 cup)
